let us introduce you to some of Hanoi’s famous dishes
Join us for cooking classes at the Koto Training Centre: 101 Xuan Dieu Street, Tay Ho District, Hanoi. If you are in central Hanoi the KOTO bus can pick you up from KOTO on Van Mieu and deliver you to the KOTO Training Centre (and return following the class).
The cost is $35 per class or $189 for the series of six classes.
Each class includes an introduction to Vietnamese cuisine & ingredients and a demonstration of techniques in a “hands on” class, taught by English speaking Chef Trainers. At the end of the class enjoy the dishes you have prepared in the garden setting at Xuan Dieu with a local beer or fruit cocktail. Depart with recipes, notes, ideas and inspiration.
Copies of KOTO a culinary journey through Vietnam are available for purchase from KOTO. Alternative class times for groups or individuals can be negotiated.

Classes are held every Tuesday night at the KOTO Training Centre, subject to bookings. Rates are valid from 01 October 2008 to 31 March 2009. Bookings & payment prior to the class are essential.

MEET YOUR CHEFS
Meet Ms HA
KOTO graduate and born and bred Hanoian, Ms Ha met KOTO founder Jimmy Pham by chance when she had a small tea stall close to the original KOTO sandwich shop. After learning about her family situation he offered her a place on the first KOTO training course. Ms Ha has been a KOTO Chef Trainer for the last four years.
MEET Ms HUE
A class 5 KOTO graduate and a KOTO on Van Mieu chef. She came to KOTO when founder Jimmy Pham learnt she had to leave school very early due to her father’s ill health. Ms Hue has worked from a young age to enable her 3 younger sisters to attend school and to financially support her family. Ms Hue’s goal is to study further so she can become a KOTO Chef Trainer.
MEET Ms TRACEY
Well known Melbourne Chef and co-author of KOTO a culinary journey through Vietnam, Tracey Lister knows how to shop, cook and eat in Vietnam. After 15 years in the Melbourne restaurant scene Tracey took a two year sabbatical, determined to put her extensive hospitality experience to good use. As KOTO’s first Chef Trainer, she helped transform disadvantaged young people into sought after hospitality professionals.
